Kiyomi is a Japanese rum made by the Helios distillery in Nago City, Okinawa. It's made from local sugar cane molasses that's fermented for three weeks and then distilled in a copper pot still. Some say Kiyomi has a unique floral profile with hints of vegetables and paprika, and that it tastes more like sake than traditional rum. Others say it has a pure and transparent appearance, with a nose of sugar cane juice and delicate sweet and saline aromas. On the palate, some say it has sweet and saline notes, lime, basil, honey, white tea, and ripe and candied lemon touches. Kiyomi is best enjoyed as a cocktail.
